JEFF'S STAR CITY SALSA

Nothing beats homemade SALSA, especially if you can use fresh ingredients out of your own garden like I have here.

INGREDIENTS:

* 3 Large tomatoes(preferably non heirloom). Score them on the bottom as pictured.

* Decent clump of Cilantro(add or subtract to your liking)

* 3-4 Cloves of Garlic(add/subtract to your liking)

* 4-5 Jalapeno's chopped. Do not de-seed

* 3/4 sweet onion chopped

* 1 Lime-which you will cut and squeeze juice on the ingredients once in the processor/blender.

* 1 TBSP Cumin

* 1.5 TSP of Kosher Salt

* 3 TSP of Honey

* 1 can of Roasted Diced Tomatoes-dump contents into a strainer to allow excess fluids to drain

* Blanch the tomatoes by putting them into a pot of boiling water for 1 minute then transfer them directly into a pot of iced water for 1 minute(Hot bath then Ice bath), this allows you to get the skin off easily. Now quarter the tomatoes and de-pulp them leaving only the flesh of the tomatoe.

*Add all ingredietns to your prosessor or blender and mix them well

That's all ya do folks, I usually allow my finished product to chill in the fridge for a few hours to further marinate together, but this step isn't necessary if you just cant wait;))

You can also can your salsa for later use just as you would deer meat!
